Carole was an author, businesswoman, rancher and independent scholar specializing in paleoanthropology – the study of human origins. She passed quietly March 19th, 2025, and is survived by her husband Dr. Leo Henikoff, and her two sons Brett and Christopher Burroughs.
Until near the end, Carole had an insatiable appetite for learning, reading and writing. She loved reading and writing books. After authoring multiple cookbooks, she moved towards other passions and published books on death, spirituality and cannibalism.
Leaving Los Angeles, where she worked at and managed her family's restaurant, she remarried and moved to Jackson Hole and purchased ranch property in 1976. She loved both Alta and Jackson. She had written food columns for local newspapers and gave her time to many fund-raising activities on both sides of the Tetons. Carole and her husband Leo had many memorable dinner parties and gatherings.
Carole’s scholarly pursuits included being on the Board of Directors for the Stone Age Institute and working directly with some of the most respected anthropologists. Her independent studies ranged from the American Museum of Natural History to the Institute of Human Origins. She lectured at Loyola as well as Rush University Medical Center and taught anthropology to grammar, middle, and high school students.
Carole loved Spring during which she often went flyfishing with her husband. She would only throw Adams, nevertheless, she was an excellent fisherman! A ‘Celebration of Life’ will be held for Carole in the spring.
